Okay I have a confession to make. You know the McGriddles from McDonald's? The ones that are like a bajillion calories? Yea well I love those. There's something about sweet pancakes mixed with the bacon {or sausage} that just screams delicious to me. I haven't had one in forever because I've been trying to avoid fast food places because I'm perpetually on a diet and let's face it, that stuff is not good for you and semi disgusting. But I figured if I made it at home it couldn't be that bad for me. So here's my version of a McGriddle!
The key to this is of course is the pancakes! Start off by warming your griddle up to medium. Combine 3/4 Cup milk and 2 tablespoons of vinegar and set aside for about 5 minutes. Combine dry ingredients 1 cup all-purpose flour, 2 tablespoons white sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt and 1/2 teaspoon cinnamon.
P.S. it turns out if you accidentally add the vanilla to the dry ingredients instead of the wet ingredients the pancakes still turn out delicious. Imagine that.
Add 1 egg to milk and vinegar and beat. Add
Add your wet ingredients to your dry ingredients and mix it up!
Pour your pancakes onto the skillet keeping them sandwhich sized. I used a handy dandy contraption that I don't know the name of :) Helpful huh? **You can see the handy dandy things in the second picture in the top right and top left of the picture. If you know the name of the handy dandy things please do tell. In the mean time I will call them the handy dandy things. 5 million times.
When pancakes are done set aside and cook your bacon!
When your bacon is done {or if you can fit it all in while it's cooking} cook 1 egg per sandwich.
While the eggs are cooking place your pancakes in the toaster oven like I did or back on the griddle/skillet/pan to melt the cheese onto the pancakes.
Layer pancake, cheese, bacon, egg, cheese, pancake
I could go for one right now and I think it's better than the one from McDonald's it has just the right amount of sweetness combined with saltiness to make it pretty much perfect!

Homemade Bacon McGriddle
Serves: 4
Ingredients:
Maple Pancakes
3/4 Cup milk
2 Tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 Cinnamon
1 egg
1 tablespoon Vanilla
1/4 Cup Maple Syrup
For in the middle
4 slices of cheese
8 Slices of Bacon
4 Eggs
Salt, Pepper Ketchup
Directions:
1. Combine milk and vinegar and set aside for about 5 minutes.
2. Combine the dry ingredients, 1 cup all purpose flour, 2 tablespoons white sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt and 1/2 cinnamon.
3. Add the egg to the milk/vinegar mixture and beat.
4. Add the flour mixture into the wet ingredients and mix. Add 1 teaspoon of vanilla and 1/4 cup of maple syrup.
5. Pour pancakes onto a skillet and cook until golden. Size is up to you but you want it to be sandwich sized so keep that in mind.
6. Once pancakes are done set aside and cook your 8 slices of bacon and 4 eggs {2 slices of Bacon and one egg for each sandwich}.
7. Put your pancakes back on the griddle or in a toaster oven to warm and melt the cheese when your eggs have about 2 minutes left to cook.
6. Layer one pancake, 2 slices of bacon, 1 egg and cheese. Top with salt, pepper and ketchup to taste. Top with another pancake!
