Grilled Zucchini



I <3 Grilled Zucchini. I <3 zucchini in general it's pretty much one of the best vegetables ever. Crazy thing is I've only recently started eating it, well within the last couple of years and just a couple of weeks ago I decided to grill some zucchini and oh I fell in love, I'd either every day if I could get B to heat the grill up every day. 


The grilling is simple but here's my yummy Lemon Garlic Marinade to top it with! 


First you want to slice your zucchini lengthwise so that it can lay across the grill. Don't cut it too thin or it will fall through the grill and then there will be no more zucchini :( 







Now that everything is cut up it's time to make the Lemon Garlic Marinade! You'll need 1oz Olive Oil and 1oz Lemon juice. 






Next you want to add 4 cloves of MINCED garlic




Add the minced garlic, salt and Pepper to taste:






and 1 tablespoon of Parmesan cheese. 




Mix it up! 




Coat the zucchini slices with the marinade, let it sit for a bit {the longer the better} but FYI I let it sit for about 2.5 seconds before I put it on the grill and it still tasted delicious. 




Then lay it on the grill







After 15-20 minutes flip it! 






Check out those grill marks, you know it's going to be good! After another 15 minutes the zucchini will be done and ready to serve! 






My zucchini was long so I was able to lay to directly on the grill. I got this zucchini in NY. The zucchini at the local supermarkets here in VA are not only double the price but they're also much shorter so the alternative is to cut them into coins cover them in the marinade and put them in aluminium foil and then on the grill for the same amount of time! Either way works! 


Lemon-Garlic Zucchini 
Prep Time: 15 Minutes 
Cook Time: 30 Minutes 
Serves 4 or 1 if you LOVE Zucchini ;)


Ingredients: 


2lbs Zucchini 
1 oz Lemon Juice
1 oz Extra Virgin Olive Oil 
4 Cloves Garlic 
1 Tablespoon of Parmesan cheese
Salt and Pepper to Taste 


Directions: 


1. Slice Zucchini lengthwise so that it can fit across the grill {or cut into coins to place it in aluminum foil on the grill}. 
2. Mix 1 oz lemon juice and 1 oz Extra Virgin Olive Oil. 
3. Mince 4 cloves of garlic and mix into the lemon juice and olive oil. Add 1 tablespoon of Parmesan cheese. Salt and pepper to taste. 
4. Lay zucchini slices on grill and cook for 15-20 minutes on each side until desired crispiness is reached.
