Sunrise Baked Potatoes

I first came across this recipe stumbling, or maybe I was looking at foodgawker.com? I'm really not sure, either way I knew immediately that I had to make it! It seemed like the perfect thing for morning and honestly I'm not sure how I haven't come across it sooner or how it's not a staple in most houses. It's just so perfect. So without further ado. 


Like most of my favorite recipes these can be made into anything you'd like them to be. I used what I had on hand Mexican Cheese Mix, Real Bacon Bits, White Potatoes and eggs! The meat and cheese are interchangeable. 


The first steps is to bake your potatoes. Once they are done scoop out the insides leaving a nice wide mouth! 



Next you put a little bit of butter on the bottom and put the first layer of cheese on. 



Then some bacon or another meat of your choice! 

And then the egg


Now this is were I'm still deciding what I like to do next. One of the first times I layered some more cheese and bacon on top and then popped it in the oven!



And this was the result! 






It was delicious but for me it wasn't exactly what I had wanted because I prefer the yolk to be soft but it was hard for me to see when the egg white set. So the next time around I put the egg in the potato and put it in the oven so that I could see when the egg white set. 



Then add the cheese and bacon and pop back in the oven for a minute or two: 





Ava is three and she LOVED it! So did Mase Face!



What you'll need: 

White Potatoes 
Eggs 
Bacon, Ham or Sausage 
Cheese 

Directions

1. Bake Potatoes  wrapped in aluminum foil for appx 45 minutes at 400 degrees {I suggest doing this the night before}

2. When the potatoes are done scoop out the insides leaving as much or as little potato as you want.

3.  Layer Cheese, meat, egg, cheese and meat again. 

4. Bake in oven at 350 degrees for 20-25 minutes a minute 

5. ENJOY!
